WHere is an easy interpretation of a cocktail featured on the seasonal menu. It's a party-sized premix which is bursting full of tastes associated with festive period, making it excellent for a festive gathering. Reserve the remaining citrus syrup you can use for brunch beverages, puddings, or to mix another batch of the drink.

Yields 10 people
For the Clementine Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
Ingredients for the Cocktail (yields 850ml, enough for 10)
400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing
Directions
To prepare the Cordial: Combine the listed ingredients into a saucepan, bring to a simmer, stirring to dissolve. Next, take off the heat and let it to reach room temperature fully. Pour to a sterilised bottle, seal and store in the fridge, it can be stored for about a month.
Preparing the Premix: Combine the specified liquid ingredients in a sizeable container, leave to sit for 60 minutes, then pass it through , ideally through muslin, to ensure it's fully clarified.
When ready to serve: Measure 85ml of the batch mix into a stirring glass packed with ice, and agitate carefully for one minute to chill. Strain into an frosted cocktail glass or similar, top with a few cranberries and finish by giving it a brief mist of the essential oil above the glass.
